Step 1
Heat the oil in a large pot over medium-high heat. Add the cumin, coriander, and mustard seeds and cook for 30 seconds, until fragrant.

Add the onions and cook until soft and golden brown, stirring occasionally, about 5-7 minutes.

Add the garlic, ginger, and red chillies and cook for another 2-3 minutes.

Add the beef and cook until browned on all sides, stirring occasionally, about 5-7 minutes.

Add the turmeric powder, garam masala, tomato paste, and white vinegar. Stir to combine.

Add enough water to cover the beef and bring the curry to a boil. Reduce the heat to low, cover the pot, and simmer for 1-2 hours or until the beef is tender.

Season with salt to taste.
