a Scandinavian take on vanilla ice cream!

    Step 1
    soak the gelatine sheets in a large basin of water for ~12 mins
    Step 2
    pour milk, cream, and honey into a saucepan, adding the vanilla beans and seeds
    Step 3
    whilst bringing the milk mixture to a simmer, begin whipping the egg yolks and sugar in a bowl
    Step 4
    while continuing to whip the mixture, slowly pour the milk mix into the egg yolk and sugar's bowl
    Step 5
    once tempered and thoroughly whipped, pour the combined liquid back into the sauce pan, continue whisking while adding heat until 85° and slightly thick
    Step 6
    take the base of the heat, removing the beans with a sieve
    Step 7
    take the soaked sheets and add them to the base, stirring until completely dissolved
    Step 8
    cool the base rapidly, and leave to chill for 5+ hours
    Step 9
    churn frigid base via preferred method, cover and put in freezer. serve once consistency stabilizes
